Yakhni Pulao is a famous Punjabi dish which can be made with chicken, beef or mutton. Itís a special cuisine serve in Punjabi weddings. Here is the recipe: Ingredients for Stock: Chicken Ĺ kg (with bones) Water as per need Garlic 1 (whole) Ginger 2 inch piece Onion 2 medium Black cardamom (barhi elaichi) 4-5 Fennel seeds (saunf) 1 tablespoon White Cumin seeds (sabut zeera) 1 tablespoon Cinnamon (darchini) 2 sticks Coriander seed (sabut dhaniya) 2 tablespoon Star anise 2-3 For Pulao Masala Oil 1 cup Rice Ĺ kg (soaked) Onion 3 Ginger garlic paste 2 tablespoon Yogurt 1 cup whipped Salt to taste Green chillies 6-8 Bay leaf 3 Black pepper crushed 1 teaspoon Green cardamom (choti elaichi) 8 Recipe: To make stock take a pan and add water, chicken, onion, ginger and garlic in it and take a muslin cloth and wrap cinnamon sticks, star anise, black cardamom, cumin seeds, fennel seeds and coriander seeds in it, tie it and put it in the pan. Cook on medium heat until meat is tendered. Now remove the cloth including spices and also remove the ginger, garlic and onion. Strain the stock and meat. Take another pan, heat oil and fry onions till golden brown. Remove half fried onion and spread that in a tissue paper to dry. Add crushed black pepper, green chillies (cut into pieces), green cardamom and bay leaf and stir for 2-3 minutes. Then add meat and whipped yogurt. Cook until oil comes up. Then add stock and when it boils add rice and cook on medium heat. When water is about to dry sprinkle the dry fried onion on top and some coriander leaves, cover and simmer for 5 minutes. Serve it with salad and meat balls.
