Ingredients. 1 pound boneless, skinless chicken breast halves
. 1 tablespoon butter
. 8-ounce dry fettuccini pasta
. 1 cup chicken broth (divided)
. 2 tablespoons fresh basil (chopped)
. 3 cup sun-dried chopped tomatoes
. 2 tablespoons vegetable oil
. 1 cup heavy cream
. 2 cloves minced garlic
. Pepper and salt to taste
Method
- Take a large saucepan, melt butter and add minced garlic and cook for 30 seconds on low heat. When the garlic looks brown add cup of the chicken broth and tomatoes and increase the heat to medium and bring to a boil. Cook for 10 minutes or till the tomatoes looks tender. After that add the cream and bring to a boil and stir the mixture. Cook until it looks thick with medium heat.
- Take the chicken and sprinkle with pepper and salt on both sides. Take a large skillet, over medium heat warm the oil and saut chicken. Cook the chicken for about 4 minutes per side or until the meat cooks properly, no pink inside.
- In a skillet, over medium heat bring the rest of cup of chicken, broth to a boil. After that, add this broth juice to the cream sauce. Stir with fresh basil and add seasoning to taste.
