. 6 lemons juiced
. 1 cup water
. 1 sliced cucumber
. 1\2 cup white sugar
- Take a saucepan and make simple syrup by stirring the sugar and water together over medium heat. Heat until the syrup boil and the sugar has dissolved. Place this syrup in the refrigerator for 30 min or until cool.
- Now place the cucumber slices in a food processor or blender. Blend until it mashed into a pulp.
- Now pour the cucumber pulp into a fine mesh strainer and place over a bowl to catch the liquid. Allow to sit it, until you have about 2\3 cup of the liquid from the cucumber for 15 minutes.
- Then stir the simple syrup, lemon juice and the cucumber liquid together in a pitcher. Serve it cold.
