It is a typical recipe from Southern Italy. Mushrooms and Spinach are sautéed with balsamic vinegar, white wine, onion and garlic. It will take 20 minutes to prep and 10 minutes to cook and will be ready in 30 minutes.
. 10 ounces clean fresh spinach roughly chopped
. 1 small chopped onion
. Fresh chopped parsley for garnish
. 14 ounces fresh sliced mushrooms
. 1\2 cup white wine
. 4 tablespoons olive oil
. 2 tablespoons balsamic vinegar
. 2 cloves chopped garlic
. Salt and ground black pepper to taste
- Take a large skillet and heat olive oil over medium heat. Sauté garlic and olive oil until they become tender.
- Fry the mushrooms until they begin to shrink about 3 to 4 minutes. Now toss in the spinach and fry, stirring constantly for few minutes.
- Now add the vinegar and stirring constantly until it’s absorbed and after that stir in the white wine.
- Now reduce heat to low and simmer until the wine has absorbed. Finally season with pepper and salt to taste and sprinkle with fresh chopped parsley and serve hot.
