How to make creamy brie soup

It is a delicious, mouthwatering creamy soup. Easy to make, and looks beautiful. It will take 15 minutes for prep and you can serve 8 people.


. 1/2 cup white wine vinegar
. 4 cup heavy cream or whipping cream
. 1 1/2 cups Chardonnay or dry white wine
. Ground white pepper and salt
. 1 12 ounce round Brie cheese, rind removed and cut into 1-inch pieces
. 1 sprig fresh basil
. 1 clove garlic, minced
. 1 sprig fresh thyme
. Sliced baguette-style toasted French bread


1. Take a medium heavy saucepan and bring vinegar and wine to boiling. After sometime reduce the heat, simmer and uncovered until liquid is reduced to 1 cup.

2. Now stir in Brie, thyme, whipping cream, basil, garlic and sprig. Cook and stir about 8 minutes or until Brie melts.

3. Take a large bowl and set a fine mesh strainer over that. Carefully pour soup through that strainer and season with white pepper and salt.

4. Serve in bowls topped with additional thyme or snipped basil and serve with sliced bread.
